Spiced Butternut Squash

Ingredients
- 4 lbs butternut squash; peeled, seeded, and cut into 1 inch cubes
- 1/3 cup vegetable oil
- 2 tbsp latin spice mix (1 tbsp sugar, 1 tsp coriander seed, 1 tbsp cumin, 2 tsp fresh ground black pepper)
- 1/4 tsp cayenne pepper
Preheat your oven to 400
combine and toss all ingredients into a large bowl. Arrange squash on baking sheet. Bake until squash is tender and starting to brown, stirring occasionally. About 40 minutes. Serve.
